目的:了解宁阳县企业食堂餐饮具消毒工作的现状,分析餐饮具消毒效果。方法:2010年—2011年用大肠菌群快速纸片对县内92户企业食堂的487份餐饮具消毒效果的检测结果进行分析。结果:消毒后餐饮具大肠菌群检测总体合格率为70.64%。大、中、小型企业食堂餐饮具合格率分别为83.33%、76.19%、65.38%,比较5种消毒方法,仅有洗碗机消毒合格率达83.33%。不同类型餐具碗、盘合格率分别为80.34%和81.34%,而筷子合格率仅为36.05%。结论:餐饮具消毒工作应选用正确有效的消毒方法,消毒后的餐饮具应采取保洁措施,防止餐饮具二次污染,并应加强餐饮具消毒工作的监测。
Objective: To understand the status quo of canteen disinfection work in Ningyang County canteen, and to analyze the disinfection effect of tableware. Methods: From 2010 to 2011, the results of disinfection of 487 tableware in 92 canteens in the county were analyzed by using coliform fast paper. Results: After disinfection tableware coliform detection overall pass rate of 70.64%. The passing rates of dining utensils for large, medium and small enterprises were 83.33%, 76.19% and 65.38% respectively. Compared with 5 kinds of disinfection methods, only the passing rate of dishwashers was 83.33%. Different types of tableware bowl, dish pass rates were 80.34% and 81.34%, while the chopstick pass rate was only 36.05%. Conclusion: The disinfection work of tableware should use correct and effective method of disinfection. The sterilized tableware should adopt cleaning measures to prevent secondary pollution of tableware and should strengthen the monitoring of tableware disinfection.
