目的掌握2011年海口市市售食品中常见食源性致病菌的污染状况。方法《2011年食源性致病菌工作手册》的规定进行样品的采集及检测,调查比较不同种类及包装的食品的食源性致病菌的检出率。结果2011年抽取的211份样品中检出菌落总数超标48份,大肠菌群超标83份,霉菌1份,微生物检测合格110份,总合格率52.1%,样品中未检出沙门氏菌、大肠杆菌O157、单核细胞增生李斯特菌、金黄色葡萄球菌等致病菌;其中熟肉制品、凉拌菜、鲜榨果蔬汁、盒饭的大肠菌群数超标率分别为65%、90%、84.2%、61.3%。不同种类样品菌落总数和大肠菌群检测的合格率差异有统计学意义(P<0.01),不同区样品菌落总数和大肠菌群检测的合格率差异有统计学意义(P<0.05)。结论大肠菌群污染食品种类多,范围广,值得高度关注,警惕食源性致病菌引发疾病暴发流行。
Objective To understand the pollution status of common food-borne pathogens in the food for sale in Haikou city in 2011. Methods “Foodborne pathogenic bacteria in 2011 Manual” requirements for sample collection and testing to investigate the different types and packaging of food-borne pathogens detection rate. Results The total number of colony detected in 211 samples in 2011 was over 48, the coliform exceeded 83, the mold was 1, the microorganism passed 110, the total qualified rate was 52.1%. No Salmonella, E. coli O157 , Listeria monocytogenes, Staphylococcus aureus and other pathogens; among them cooked meat products, salad, fresh fruit and vegetable juice, the number of coliform bacteria exceeded the rate of 65%, 90%, 84.2%, respectively, 61.3%. There were significant differences in the total number of colonies and coliform group (P <0.01) in different types of samples, and there was significant difference in the total number of colony and coliform in different areas (P <0.05). Conclusion Coliform bacteria have many kinds of foodstuffs and a wide range of foodstuffs, which deserves great attention. It is very important to guard against the outbreak of foodborne pathogens.
