用异丙醇及丙酮反复提取虾酱中的诱变剂前体,得两种粗提物。亚硝化处理后,其诱变性较虾酱直接亚硝化时高5倍左右。对新提物的毒性及稳定性进行了研究。
The mutagen precursors in shrimp paste were repeatedly extracted with isopropanol and acetone to obtain two crude extracts. After nitrosation, its mutagenicity was about 5 times higher than that of direct nitrosation of shrimp paste. The toxicity and stability of the new extracts were studied.
