袁皓《重归宜春隅成十六韵寄朝中知己》:“殷勤倾白酒,相劝有黄鸡。”李白《南陵别儿童入京》:“白酒新熟山中归,黄鸡啄黍秋正肥。”“白酒”一词在唐诗中屡见不鲜。实际上,先秦时代,白酒已流行。《礼记·内则》记载:“酒:清,白。”将饮用的酒品分为清酒和白酒两种。同书《郊特牲》篇云:“醆酒涚说于清,汁酸涚于酸酒。”郑玄注:“醆酒,盎齐。盎齐差清,和之以清酒泲之而已。”这是说醆酒亦名盎齐,因酒质不够清澈,故用清酒过滤。《说文·酉部》:“醆,酒浊而微清也。”《周礼·天官·酒正》:“(酒正)辨五齐之名……三曰盎齐。”郑玄注:“盎,犹翁也。成而翁翁然葱白色,如今酂白矣。”按:酂
