目的通过对柳江县市售食品中食源性致病菌污染状况的监测,为预防食源性疾病提供科学依据。方法按照柳江县食源性致病菌监测工作方案的要求,在各个监测点采集8大类市售食品共206份,其中2011年采集市售食品96份,2012年采集市售食品110份,进行相应的致病菌检测,结果数据用统计学方法进行分析。结果 206份抽检食品中共分离出致病菌17株,其中金黄色葡萄球菌4株,阪崎肠杆菌2株,腊样芽孢杆菌11株,总检出率为8.25%。熟肉制品和生榨果汁的菌落总数、大肠菌群污染严重,不合格样品比例分别为58.33%和83.33%。结论柳江县居民的消费食品中存在食源性致病菌的污染,其中熟制米面制品和生榨鲜果汁等自制食品的卫生质量较差,应加强此类食品的卫生监督,预防食源性疾病的发生。
Objective To monitor the status of food-borne pathogenic bacteria in the commercially available foods in Liujiang County and provide a scientific basis for the prevention of foodborne diseases. Methods According to the requirements of the monitoring program of food-borne pathogenic bacteria in Liujiang County, a total of 206 foodstuffs were collected from 8 major types of foodstuffs at various monitoring sites, including 96 commercially available foods in 2011, 110 commercially available foods in 2012, The corresponding pathogen detection, the results of the data using statistical methods for analysis. Results Totally 17 pathogens were isolated from 206 sampled foods, including 4 strains of Staphylococcus aureus, 2 strains of Enterobacter sakazakii and 11 strains of Bacillus cereus. The total detection rate was 8.25%. The total number of colony of cooked meat products and raw juices, coliform contamination was serious, the proportion of unqualified samples were 58.33% and 83.33% respectively. Conclusion There is contamination of food-borne pathogenic bacteria in the consumed food of residents in Liujiang County. Among them, homemade food products such as cooked rice products and raw fresh fruit juice are of poor quality of hygiene. Health supervision of such foods should be strengthened to prevent food-borne The occurrence of the disease.
