一、问题的提出冷冻食品小包装具有质量好,损耗少,清洁卫生,销售简单,烹调方便,容易携带等优点。实践证明,它深受群众欢迊,也将是今后的发展方向之一。但是,现有冷冻厂的冻结装置,无论是风冷隧道式冻结间,还是管架式冻结间,在冻结小包装时,都存在着不少问题。1.冻结间使用率较低,每次冻结的数量显著地减少,如本厂有-15吨/次管架式冻结间,在冻结小包装时其每次冻结量只达8～9吨。2.冻结完毕,脱盘,小包装,大包装等工序的操作大部份在低温下进行,大大增加了冷藏工人的劳动
