[目的]了解餐饮业生食水产品水产蓄养箱中养殖水的水质卫生情况,为今后水产蓄养箱卫生标准的制订提供参考依据。[方法]2009年4月下旬,在位于珠江三角洲的广东省江门市、广州市部分不同档次的40家餐饮单位进行调查。[结果]检测养殖水40份,菌落总数范围为60~78 000 cfu/ml,中位数3 400 cfu/ml;大肠菌群范围为<30~>11 000 MPN/100 ml,中位数1 520 MPN/100 ml;33份检出肠道致病菌,检出率为82.50%,其中沙门菌检出率为10.00%,副溶血性弧菌检出率为77.50%。肠道致病菌检出率,广州市、江门市分别为80.00%、85.00%(P>0.05),卫生级别A级、B级、C级餐饮单位分别为6/8、80.00%、88.24%(P>0.05),盐水、淡水的养殖水分别为90.00%、75.00%(P>0.05)。[结论]广州市、江门市餐饮业生食类水产蓄养箱养殖水微生物污染严重。
[Objective] To understand the sanitation of aquaculture water in the aquaculture aquaculture aquarium of catering industry, and provide a reference for the formulation of hygiene standards for aquaculture storage tanks in the future. [Method] In the last ten days of April 2009, 40 food and beverage units of different grades in Jiangmen City and Guangzhou City of the Pearl River Delta were investigated. [Result] The results showed that the total number of colonies ranged from 60 to 78 000 cfu / ml with a median of 3400 cfu / ml and the range of coliform bacteria was from <30 to> 11 000 MPN / 100 ml with a median of 1 520 MPN / 100 ml. The detection rate of intestinal pathogens in 33 samples was 82.50%. The detection rate of Salmonella was 10.00% and that of Vibrio parahaemolyticus was 77.50%. The detection rate of intestinal pathogens was 80.00% and 85.00% respectively in Guangzhou and Jiangmen (P> 0.05). The health class A, B and C catering units were 6 / 8,80.00% and 88.24% (P> 0.05). The brine and freshwater farming water were 90.00% and 75.00% respectively (P> 0.05). [Conclusion] The microbial contamination of aquaculture water in food and beverage aquaculture storage tanks in Guangzhou and Jiangmen was serious.
