[目的]了解莱州市食(饮)具消毒状况,为监督监测提供科学依据。[方法]根据GB14934-1994《食(饮)具消毒卫生标准》,用大肠菌群快检纸片对2004~2008年莱州市食(饮)具38700份进行大肠菌群检测。[结果]2004~2008年合计检测38700份,合格率为66.57%。各年食(饮)具检测合格率分别为66.24%、66.10%、66.86%、66.93%、66.95%,不同年份食(饮)具检测合格率差异无统计学意义(P>0.05)。大型、小型、学校食(饮)具合格率分别为73.18%、63.31%、91.81%,不同经营规模餐饮单位食(饮)具合格率差异有统计学意义(P<0.01);每年一~四季度食(饮)具检测合格率分别为73.13%、63.27%、66.78%、73.12%,不同季度食(饮)具消毒检测合格率差异有统计学意义(P<0.01)。[结论]莱州市学校食(饮)具合格率较高,小型餐饮单位食(饮)具合格率较低,不同季度合格率以二、三季度较低。
[Objective] To understand the status of food (drink) disinfection in Laizhou and provide scientific basis for supervision and monitoring. [Method] According to GB14934-1994 “food (drink) with disinfection health standards”, with coliform bacteria fast test paper 2004-2008 Laizhou food (drink) with 38700 coliform detection. [Result] The total test was 38,700 from 2004 to 2008 with a pass rate of 66.57%. The passing rate of food (drink) in each year was 66.24%, 66.10%, 66.86%, 66.93%, 66.95% respectively. There was no significant difference in passing rate of food (drink) in different years (P> 0.05). The passing rates of large, small and school food and drink were 73.18%, 63.31% and 91.81%, respectively. The passing rate of food and beverage of different scale of operation catering units was statistically significant (P <0.01) The passing rate of food (drink) in the third quarter was 73.13%, 63.27%, 66.78% and 73.12%, respectively. There was significant difference in pass rate of food (drink) with disinfection in different quarters (P <0.01). [Conclusion] The school food (drink) in Laizhou City had a high pass rate. The pass rate of food (drink) in small catering units was low. The pass rates in different quarters were lower in the second and third quarters.
