皖西大别山是安徽省主要茶区之一,而整个大别山区也是豫、鄂、皖的主要茶区。这里所产的茶叶早已名闻遐迩。在唐代皖西茶区就已经是很有名气了,茶圣陆羽在世界第一部茶叶著作《茶经》中,即描述为:“淮南以光州上,义阳郡舒州次,寿州下,薪州、黄州又下”。唐代封演拱《封氏闻见记》所载:“其茶自江淮而来,舟车相继,所在山积,色额甚多”。由此可见当时的茶叶产量已具有相当大的规模,品质也属上乘。但是,这一古老的茶区,由于采、制历史悠久,加之历代茶类的变动,如早年的黄大茶改制红茶,再由红茶改制黄大茶,又从黄大茶改制炒青绿茶等等,使皖西的采摘方法变得比较多
