深圳市宝安区抽检面制品中铝污染情况分析

目的了解深圳市宝安区面制品中铝污染情况,为评估本地区面制品中铝的膳食暴露提供数据支持。方法采用随机抽样,进行实验室检测,结果录入Excel软件建立数据库,应用Epi Info3.5.3统计软件进分析。结果此次调查深圳市宝安区面制品铝含量合格率(91.9%),高于全市和各区往年监测水平;其中,农贸市场烘焙类面制品铝含量合格率(50.0%)最低,平均数301.9mg/kg,中位数为273.4mg/kg,铝超标问题严重。结论深圳市宝安区各销售场所销售的面制品中仍存在铝污染现象,建议监管部门加大对含铝添加剂的管控,对相关企业、经营者开展食品安全知识和使用食品添加剂知识培训,开展本地区膳食暴露评估,保障本地区食品安全。 Objective To understand the aluminum contamination in flour products in Bao’an District of Shenzhen City and provide data support for the assessment of dietary exposure to aluminum in flour products in this area. Methods Random sampling was used to carry out laboratory tests. The results were entered into Excel software to build a database and analyzed using Epi Info3.5.3 statistical software. Results In this survey, the aluminum content passing rate of Baoan District, Shenzhen was 91.9%, which was higher than the monitoring level of the whole city and districts in previous years. Among them, the pass rate of aluminum content of bakery products in the farmer’s market was the lowest (50.0%) with an average of 301.9mg / kg, the median was 273.4mg / kg, aluminum serious problem. Conclusions Aluminum contamination still exists in flour products sold in all the sales places in Bao’an District of Shenzhen City. It is suggested that regulators should increase the control over the additives containing aluminum, carry out food safety knowledge and food additives knowledge training to related enterprises and operators, Regional dietary exposure assessment to ensure food safety in the region.
