《食品卫生法》第十二条规定“食品容器、包装材料和食品用工具、设备必须符合卫生标准和卫生管理办法的规定。为了解我市饮食业熟食加工用具洗刷、消毒落实情况及其污染状况,我们于去年七月对我市大型饭店、小吃部、小饭摊的刀、案用具进行了使用前抽样细菌学监测,共计193份。1.材料来源及监测方法1·1 使用滤纸粘贴法随机抽取直接使用的刀、案等用具,按照无菌操作方法,4小时内送检。1·2 按国家标准《食品卫生检验方法》进行大肠菌群监测。
