我国是世界水稻种植面积第二大国,总产(以糙米算)居世界首位,单产在亚洲仅次于日本和南朝鲜。目前大多数水稻当家品种虽产量较高,但品质较差。因此,在高产稳产的基础上改良稻米品质已成为水稻育种研究的重点课题之一。稻米品质包括5个方面:(1)市场品质,主要以粒长、粒型、垩白和色泽等决定。(2)碾磨品质,包括糙米率、精米率和整精米率等。(3)蒸煮和食味品质,是通过直链淀粉含量、糊化温度、胶稠度、延长性、香味和味道评价等来衡量。(4)储藏品质,一般以米粒抗
China is the second largest country in rice acreage in the world, with the total output (calculated as brown rice) ranking first in the world and the yield in Asia after Japan and South Korea. At present, most of the rice varieties are higher yield, but the quality is poor. Therefore, improving rice quality on the basis of high and stable yield has become one of the key topics in rice breeding research. Rice quality includes five aspects: (1) market quality, mainly grain length, grain type, chalky color and other decisions. (2) Milling quality, including the rate of brown rice, milled rice and milled rice rate. (3) Cooking and eating quality, as measured by amylose content, gelatinization temperature, gel consistency, elongation, flavor and taste rating, and the like. (4) storage quality, generally in grain resistance
