用盐析法从苦杏仁中提取蛋白,分别用胰蛋白酶、碱性蛋白酶、木瓜蛋白酶和胃蛋白酶对其进行水解,研究杏仁蛋白水解液对血管紧张素转换酶活性的影响。结果表明,杏仁蛋白的4种酶水解液均能抑制血管紧张素转换酶活性,其中木瓜蛋白酶水解液抑制效果最显著。用木瓜蛋白酶通过分别不同时间的水解,制备不同水解度的杏仁蛋白水解液,进一步研究对血管紧张素转换酶活性抑制率的影响,结果表明,水解度在7%~12%之间的杏仁蛋白木瓜蛋白酶水解液的抑制效果最佳,抑制率在46%~44%。以上结果表明,杏仁蛋白的木瓜蛋白酶水解液是血管紧张素转换酶抑制活性肽的较理想来源。
Proteins extracted from bitter almonds by salting-out method were hydrolyzed by trypsin, alkaline protease, papain and pepsin to study the effect of almond protein hydrolyzate on the activity of angiotensin converting enzyme. The results showed that all four hydrolyzates of almond protein could inhibit the activity of angiotensin converting enzyme, of which papain hydrolyzate inhibited most effectively. The papain was hydrolyzed at different time to prepare allantoic hydrolyzate with different degree of hydrolysis and further study the effect on the inhibitory rate of angiotensin converting enzyme activity. The results showed that the degree of hydrolysis of almond protein between 7% ~ 12% Papain hydrolyzate inhibited the best, the inhibition rate of 46% to 44%. The above results show that apricot papain hydrolyzate is a more ideal source of angiotensin converting enzyme inhibiting active peptides.
