2001年5月31日中午,杭州“知味观”三层的一个单间里,服务生双手捧着一枚刚从蒸锅里取来的“新奇士”(美国加州的一种橙子,Sun Kiss),解开包扎玻璃纸的带子,白瓷薄壳托着新奇士,一阵桔香,一抹橙黄,一片雕了花瓣图形的头盖,在座宾客无不称奇。橙子里面是原汁原味的橙粒、蟹黄、姜丝,碗里是南宋秘方三味——玫瑰醋、杭白菊、绍兴香雪酒。三味调料借了蒸气熏入橙子,如果火候合适且现吃现做,蟹黄、姜丝、橙粒,圆融交合,与东、南、西、北各路菜系相比,独具“鲜、香、清、醇”,可谓正宗杭州味道。尝过这一道菜,方知“知味观”确知其味。
