偶氮类人工合成色素喹啉黄影响儿童智力发育,被美国、欧盟等国家在食品中禁用。采用荧光和紫外光谱法研究了模拟生理条件下,喹啉黄与牛血清白蛋白(BSA)的相互作用机制及常见金属离子(Cu~(2+)、Zn~(2+)、Mg~(2+))对BSA-喹啉黄体系的影响。实验结果表明,在金属离子存在下,喹啉黄对BSA的猝灭过程仍为静态猝灭,但作用力强弱有所变化,Mg~(2+)的参与未改变喹啉黄与BSA之间的主要作用力,Zn~(2+)、Cu~(2+)的参与使两者之间的作用力由范德华力转变为静电作用力和疏水作用力。
Azo synthetic yellow quinoline yellow affect children’s mental development, the United States, the European Union and other countries banned in food. The mechanism of interaction between quinoline yellow and bovine serum albumin (BSA) and the effects of common metal ions (Cu 2+, Zn 2+, Mg ~ (2 +)) under simulated physiological conditions were studied by fluorescence and ultraviolet spectroscopy 2+)) on BSA-quinoline yellow system. The experimental results show that quenching of BSA by quinoline yellow is still a static quenching in the presence of metal ions, but the strength of the substrate varies with the addition of Mg 2+. The main force between the two, Zn ~ (2 +), Cu ~ (2 +) participation between the two forces from van der Waals forces into electrostatic force and hydrophobic force.
