本文研究了苹果贮藏期间虎皮病的发病规律与过氧化氢(H_2O_2)变化的相关性。试验表明,随着贮藏时间的延长虎皮病发病率逐渐增加。H_2O_2能够诱导虎皮病明显增加,过氧化氢酶(CAT)能够使虎皮病显著减少。结果表明苹果虎皮病与H_2O_2的水平成正相关。H_2O_2和其它自由基的积累打破了H_2O_2和自由基产生和积累的平衡。膜脂过氧化产物的积累,破坏了细胞膜的结构及多酚类化合物和多酚氧化酶的区域分布。组织迅速褐变,致使虎皮病的症状出现。初步结果显示:H_2O_2和自由基可能是虎皮病致病的直接因子。
This article studies the correlation between the pathogenesis of tiger’s disease and the change of hydrogen peroxide (H 2 O 2) in apple during storage. Experiments show that as the storage time increases the incidence of tiger skin disease gradually increased. H 2 O 2 can induce a significant increase in tiger skin disease, catalase (CAT) can make a significant reduction in tiger skin disease. The results show that the apple tiger skin disease and H 2 O 2 levels are positively correlated. The accumulation of H 2 O 2 and other free radicals broke the balance between the production and accumulation of H 2 O 2 and free radicals. Accumulation of membrane lipid peroxidation products undermines the structure of the cell membrane and the regional distribution of polyphenolic compounds and polyphenol oxidase. Rapid tissue browning, resulting in the symptoms of tiger skin disease. Preliminary results showed that: H 2 O 2 and free radicals may be the direct cause of tiger disease.
