目的对肉猪养殖和屠宰过程进行监测调查,了解我市猪肉及其制品各种安全风险隐患的关键环节和主要风险因子,了解我市肉猪市场的污染状况,方法从2011年2月至2011年12月期间,按照省卫生厅等7部门《关于印发2011年河南省食品安全风险监测方案的通知》和《2011年河南省食源性致病菌专项监测方案》,2011年在3个监测点共检测样品264份。结果从264份样品中检出致病菌40份,其中从猪酮体涂抹物上首次检出1株火鸡沙门氏菌。结论火鸡沙门氏菌的检出提示我市的肉猪市场的污染菌型出现了新的情况,如果不加强控制,很可能会迅速引起食物中毒,这将会严重影响广大消费者的身体健康。
