目的通过测定深圳市中心城区食物中的硒含量,计算居民每日硒摄入总量,为评估居民合理硒摄入提供科学依据。方法根据深圳市居民户膳食调查结果,在深圳市中心城区随机采购食物,测定各种食物的硒含量,计算深圳市中心城区居民日常硒的摄入量。结果深圳市中心城区居民通过谷、豆、薯类、水果蔬菜和动物性食物每人每天摄入硒的量为126.315 9μg,以动物性食物中摄入硒的量相对最高。结论深圳市中心城区居民每日硒摄入量达到中国营养学会推荐的最低标准,符合世界卫生组织建议硒摄入量要求。
Objective To determine the total selenium intake of residents by measuring the selenium content of food in downtown Shenzhen and provide a scientific basis for assessing the reasonable selenium intake of residents. Methods According to the dietary survey results of Shenzhen residents, food was purchased at random in the downtown area of Shenzhen, the selenium contents of various foods were measured, and the intake of daily selenium in Shenzhen downtown area was calculated. Results The residents of Shenzhen city center inhaled 126.315 9 μg of selenium per day through valley, bean, potato, fruit vegetable and animal food, and the highest intake of selenium was in animal food. Conclusion The daily intake of selenium in residents of downtown area in Shenzhen has reached the minimum standard recommended by the Chinese Society of Nutrition, which meets the requirement of selenium intake recommended by the World Health Organization.
