HACCP的推行已成为当今国际食品行业安全质量管理不可逆转的发展趋势和必然要求。结合生猪生产存在的质量问题和猪肉市场需求的现状,就生猪养殖业建立HACCP管理体系的必要性进行探讨,对生猪养殖业已经出现或可能出现的危害进行分析;提出生猪养殖业HACCP实施步骤,控制危害,制定有效预防措施,寻求猪肉产品的安全卫生之路。
The implementation of HACCP has become an irreversible trend and an inevitable requirement in the international safety and quality management of the food industry today. Based on the existing quality problems of pig production and the demand of pork market, the necessity of establishment of HACCP management system in pig breeding industry was discussed, and the hazard that occurred or was likely to occur in pig breeding industry was analyzed. The implementation steps of HACCP in pig breeding industry were proposed, Control hazards, develop effective preventive measures to seek the safety and health of pork products.
