采用交联+包埋+交联法对单宁酶进行固定化,在单因素的基础进行了正交优化研究,并对固定化单宁酶的最适作用温度、最适作用pH等酶学性质进行了初步研究。前交联戊二醛体积分数为0.3%,后交联戊二醛体积分数为0.4%,前交联温度为30℃,后交联时间1.0 h为最优条件。单宁酶经固定化后,温度和pH稳定性显著提高,固定化酶的最适作用温度为50℃,最适作用pH 5.0。
