Objective: To understand the pollution of lead, cadmium and mercury in food contaminants in Xuchang City in 2010. Methods: A total of 210 samples were collected from seven large-scale supermarkets in the five counties of Xuchang City by means of purchase. The contents of lead, cadmium and mercury were determined by digestion with atomic absorption spectrometry. Results: There are some kinds of foodstuffs in the seven categories of food in the city that have different levels of heavy metal pollution. Lead exceeded the standard rate of 5.7%, mainly contaminated by lead foods are vegetables, processed foods and edible mushrooms. Exceeded the rate of cadmium detected 8.5%, contaminated food and more concentrated in edible mushrooms, but also a small amount of liver. The highest detection rate of mercury in fish and mushrooms. Conclusion: Some foods in Xuchang City do have different levels of pollution. Environmental pollution is the main reason that causes excessive levels of heavy metals in food.
