人工合成色素色泽鲜亮,价廉易得,能使食品具有良好的感官性状,所以在冷饮的生产中有广泛的应用。但人工合成色素具有一定的毒性,大量使用能对人体健康产生一定的危害。为了解人工合成色素在本市的使用情况,掌握存在的问题,为冷饮卫生的监督和管理提供科学依据,我们于1992年6～8月对在本市生产和销售的冷饮,进行了人工合成色素使用情况的调查。现将结果报告如下。
