目的了解郑州市售食品中化学污染物状况及污染水平。方法分别对2015年采集于郑州市市场上15大类865份食品样品的农药残留、生物毒素、食品添加剂、有害元素和非食用物质等污染物进行检测和监测。结果共监测865份食品样本,不合格样品146份,总超标率为16.9%。超标项目按超标率由高到低分别为含铝添加剂、亚硝酸盐和元素铅。其中油条、油饼中含铝添加剂超标率为76.9%,熟肉制品中亚硝酸盐超标率为12.9%,香辛料中铅超标率为8.3%。结论郑州市售食品污染物水平总体较低,但部分食品存在安全隐患,应加大卫生监督力度。
Objective To understand the status of chemical contaminants and the level of pollution in food sold in Zhengzhou. Methods The pesticide residues, biological toxins, food additives, harmful elements and non-food substances in 865 food samples collected in Zhengzhou market in 2015 were detected and monitored respectively. Results A total of 865 food samples were monitored. 146 unqualified samples were detected, with a total over-standard rate of 16.9%. Exceeding the standard of over-standard items from high to low were aluminum-containing additives, nitrite and lead. Including fried dough sticks, cake containing aluminum additives exceeded the rate of 76.9%, cooked meat products nitrite excessive rate of 12.9%, spices spiked 8.3%. Conclusion The level of food contaminants on the market in Zhengzhou is generally low, but some food safety hazards exist, and health supervision should be strengthened.
