目的 了解湖南省城乡居民经济收入对膳食结构的影响变化。方法 采用多阶段分层整群抽样方法 ,于 1997年对湖南省长沙市 (城市 )和沅陵县 (农村 )进行了调查 ,并将 493名成人的经济收入水平 ,膳食和体质状况与 1991年的调查结果进行比较分析。结果 随经济收入的提高 ,两地居民谷物类食物摄入量下降 ,动物性食物摄量上升 (P<0 .0 5 ) ,在高、中收入人群碳水化合物热能比低于 6 0 % ,脂肪热能比超过 30 % ,超重和肥胖 (BMI≥ 2 5 )人群增多 ,特别在城市。长沙市和沅陵县膳食构成差别较大 ,反映地区之间的不平衡性。结论 在经济收入增长较快的同时 ,城乡居民膳食结构正处于转型过程中 ,并存在膳食结构不平衡现象 ,积极推行“中国居民膳食指南”非常必要
Objective To understand the impact of urban and rural residents’ incomes on dietary patterns in Hunan Province. Methods A multi-stage stratified cluster sampling method was used to survey Changsha City (City) and Yuanling County (Rural Area) in Hunan Province in 1997. The economic income level, diet and constitutional status of 493 adults were compared with 1991 The findings of the comparative analysis. Results With the increase of economic income, the cereal intake of residents in both places decreased and the intake of animal food increased (P <0.05). The carbohydrate heat energy ratio of high and middle income groups was lower than 60% More than 30% of thermal energy, overweight and obesity (BMI ≥ 25) population increased, especially in cities. The composition of diet in Changsha City and Yuanling County is quite different, reflecting the imbalance between regions. Conclusions While the economic income increases rapidly, the dietary structure of urban and rural residents is in the process of transformation, and there is an imbalance in dietary structure. It is very necessary to actively promote the “Dietary Guidelines for Chinese Residents”
