目的应用流行病学方法,对某企业一起菜豆引起暴发食源性急性胃肠炎的原因进行调查分析,旨在为预防类似的事件再次发生。方法将有共同饮食史者进行个案调查,并通过病人病例对照研究分析危险因素。结果本次事件发病28人,罹患率9.39%,临床症状以恶心、呕吐为主,无发热,平均潜伏期3.0 h,暴露危险因素为食用刀豆炒肉片食品。结论根据流行病学调查以及病例对照研究、结合病人临床症状,确认此次事件为一起刀豆加工不当造成的中毒事件。
Objective To analyze and analyze the causes of food-induced acute gastroenteritis caused by beans in a certain enterprise using epidemiological method, aiming to prevent the recurrence of similar events. Methods A cohort of persons with a common dietary history was investigated and risk factors were analyzed by patient case-control studies. Results The incidence of this incident 28 people, the attack rate of 9.39%, the main clinical symptoms of nausea and vomiting, no fever, the average incubation period of 3.0 h, risk factors for exposure to consumption of cassowary meat slices of food. Conclusion According to epidemiological investigation and case-control study, combined with the clinical symptoms of patients, confirmed the incident as a result of improper improper processing beans poisoning.
