一、食用菌发展概况台湾省食用菌栽培的历史并不长久.五十年代才开始发展洋菇生产并外销.近十多年来各种食用菌相继发展起来,主要有洋菇、草菇、鲍鱼(蚝)菇、金针菇、松茸、珍珠菇、黑木耳、白木耳(银耳)与灵芝等,是食用菌生产种类繁多、生产很为普遍的地区.据估计一九八○年全省有菌种场百余家,菇农12,573户;种植食用菌千余公顷(香菇林地除外);生产量折成新鲜菇达160,279余吨,其中洋菇76,159吨、草菇10,000吨、黑木耳(干)5,000吨、金针菇2,100吨、
