研究胡桃楸种仁壳多糖的分子修饰方法。通过正交试验优化种仁壳多糖羧甲基化和硫酸酯化条件,采用红外光谱法定性分析分子修饰的种仁壳多糖,并比较修饰前后多糖的抗氧化作用。结果表明,采用优化方法进行种仁壳多糖的分子修饰后,多糖分子的主要结构仍保存良好,且分别具有羧甲基化和硫酸酯化特征吸收峰;分子修饰多糖对ABTS的清除作用均高于未修饰多糖,羧甲基化多糖强于硫酸酯化多糖。表明种仁壳多糖分子修饰成功,分子修饰后的种仁壳多糖抗氧化性得到提高,且羧甲基化的分子修饰方法取得了更好的效果。
To study the molecular modification method of walnut polysaccharide from Juglans mandshurica. The orthogonal test was used to optimize the carboxymethylation and sulfation conditions of amylose chitin, and the qualitative analysis of molecularly modified amylose chitosan was carried out by infrared spectroscopy. The antioxidative effects of polysaccharides before and after modification were also compared. The results showed that the molecular structure of polysaccharides modified by polysaccharides modified by polysaccharides still retained well, and had the characteristic peaks of carboxymethylation and sulfation respectively. The removal of ABTS by molecular-modified polysaccharides was high In unmodified polysaccharides, carboxymethylated polysaccharides are stronger than sulfated polysaccharides. The results showed that the modification of seed chitin molecule was successful, the antioxidant activity of modified chitin polysaccharide was improved, and the carboxymethylation molecular modification method achieved better results.
