本试验以菠菜、番茄和甜椒的叶片和抗坏血酸(AsA)含量差异较大的甜椒、番茄、马铃薯、萝卜和黄瓜的产品器官为试材,研究不同叶龄和不同发育期产品器官AsA含量与其相关酶活性,并分析它们之间的相互关系。试图阐明不同物种间蔬菜AsA含量存在差异的生理原因。主要研究结果如下:1.甜椒、番茄、马铃薯、萝卜和黄瓜的产品器官AsA含量均随其发育进程一直升高。5种蔬菜不同发育期产品器官的AsA含量与DHAR和GalLDH活性变化趋势基本一致,AsA+DHA含量与GalLDH活性的变化趋势也基本一致。2. 5种蔬菜产品器官形成末期AsA含量与DHAR活性呈显著正相关(r=0.9423,P<0.05),与GalLDH活性的相关性也较显著(r=0.8597,P<0.10),AsA+DHA含量与GalLDH活性相关性明显(r=0.7904,P<0.15)。AsA含量与MDHAR、AAO和APX活性无显著相关性。3.不同物种蔬菜产品器官AsA含量存在较大差异的原因与其GalLDH和DHAR活性存在较大差异密切相关,MDHAR、AAO和APX活性不是影响其AsA含量的主要因素。4.菠菜、番茄和甜椒叶片AsA和AsA+DHA含量均以衰老叶为最低。而其叶片GalLDH活性随叶龄的增加逐渐降低,最终GalLDH活性也均以衰老叶为最低。说明3种蔬菜叶片GalLDH活性与其AsA含量密切相关。5.随着菠菜、番茄和甜椒叶龄的增加,DHAR、MDHAR和GR活性均是在衰老叶中最低,其中菠菜和番茄叶片DHAR活性变化趋势与AsA和AsA+DHA含量的变化趋势一致。APX和AAO活性的变化与AsA含量的变化无明显规律性,说明APX和AAO活性不是影响叶片AsA含量的决定因素。
