Pulsed electric fiend (PEF) process refers to the application of a short burst of high intensity electric field to a biological material.When the applied electric field causes a transmembrane potential difference higher than the critical value,permeability of the membrane increases.Critical transmembrane potential difference depends on the dielectric strength of the membrane structure.Pores are formed on the membrane as results of PEF process.When a critical electric potential difference is significantly exceeded across a membrane of lipid bi-layer pores will form through the membrane.Cellular content leaks out and causes non-recoverable damage.
