The goose fatty liver,rich in unsaturated fatty acid,is nutritious and sanitarian.However,the unsaturated fatty acid is easily oxidized rancidity.So the goose liver was taken as raw material to enhance the goose fatty liver microcapsules of oxidative stability after microencapsulation processing.Technical parameters chosen:the emulsive liquid sample made from a dosage of 36% core material,60% wall material,2% emulsifier and 2 % gelatin in the temperature of 70 ℃.
