This paper studied the extraction technology of proanthocyanidins from grape seeds by high intensity pulsed electric field (PEF).The high intensity pulsed electric field can induce a rapid change of cell membrane,for example permeability,structure,so the transition of cell membranes is improved heavily and substances are dissolved in solvent more easily.In order to optimize the extraction conditions of proanthocyanidins from grape seeds by high intensity pulsed electric field,various experiments were investigated.The effectiveness factors affecting the yield of proanthocyanidins were chose and studied as the single-factors,such as pH value,materials ratio,electric field strength and pulse number of high intensity pulsed electric field treatment.
