  The application of high pressure processing (HPP) technology in fishery products processing was introduced in this paper.As a novel technology,HPP can retain the original color,odor and taste of food at utmost therefore satisfy peoples demand of minimum process.Sterilization,inactivation of enzymes and texture rebuilding of HPP was introduced and shucking of shellfishes,freeze-thaw were also simply introduced in this paper.HPP has gained more and more attention of scientists all around the world; researches of relative fields are under deep study.Although the large scale application is hindered by high equipment investment and processing cost,HPP is still a promising technology which stands for the new direction of food processing.
