Sufu is the termented soybean curd originating in China,and rich in nutrients,many varieties of sufu exist,but no system sensory evaluation has been conducted so far,for this reason,a descriptive vocabulary was developed to fully describe the sensory characteristics of sufu.Eight commercial sufu were used in the study.Ten subjects participated in 8 round-table discussions to develop descriptive language and definitions.The 8 sufu were evaluated in 3 replications using this language.
