Introduction:Staphylococcal food poisoning is the food borne disease most frequently reported in Venezuela.According to epidemiological records,most of the outbreaks are traced back to fresh cheese,a popular variety with high level of consumption,commonly used to prepare the children breakfast.Most of the staphylococcal food poisoning outbreaks happened at public schools,where high number of scholars were affected.The manufacturing process in a local producer plant was evaluated,and some measures were established to accomplish a food safety objective:a product free of the staphylococcal food poisoning risk in a serving portion at the time of consumption.Materials and methods:National and international GMP guidelines were used to evaluate the cheese making process,from farm to the consumer table,during successive inspections.
