Superheated steam drying technique has been known for quite a long time,but its application in food drying is yet to explore.In this work,a mathematical model to simulate the drying of cooked rice was developed using mass and energy conservation equations for solid and steam phases.The resulting partial differential equation system was solved by means of finite elementmethod.The simulation model was used to analyze the influence of different variables (bed height,operating pressure,steam velocity,and steam temperature) on solid moisture content,as well as on solid and steam temperature profiles along the bed.The computer simulation can be used in the optimization of driers geometry,drying media prooerties,and ooeration parameters.
