Polycyclic aromatic hydrocarbons (PAHs) are kinds of organic compounds containing two or more condensed aromatic rings.Currently,there are more than 200 known kinds of PAHs,some of which are highly carcinogenic.The contaminated food by PAHs are not mainly from food process,cooking (smoking,grilling,baking,frying) process,but also by the air (through deposition),soil (through conversion) and water (through deposition and transfer).The contaminated food could be absorbed by gastrointestinal tract and widely distributed throughout the body,resulting in acute or chronic injury.Animal tests proved that PAHs could cause systemic reactions in mice.
