　　In the different extrusion conditions,the effect of high moisture protein extrusion parameters on the product texture,color characteristics,the extruder system parameters was studied.Soy protein isolate and wheat protein at different ratio were extruded at 60%~70%moisture contents and 120℃~160℃ cooking temperature.
