Red bayberry (Myrica rubra Sieb.et Zucc) is Chinese native subtropical fruit tree.It ripens from mid-June to early-July in main production areas,Zhejiang province and Jiangsu province.Due to the importance of economy and ecology,the production of red bayberry has recently developed dramatically,there are 67,000 hectares and 313,600 tons in 2006 only in Zhejiang Provice,It can be expected that the yield of red bayberry may be still increased in a few years later.In this paper recent advances on chemical analysis and processing techniques were reviewed Production and several products from this berry were introduced.In recent study we collected 14 varieties of red bayberry from Zhejiang province.Their juice processing characteristics were investigated based on juice rate,stone percentage,sensory quality and chemical compositon.
