Milk protein concentrate (MPC) was pretreated either by microwave irradiation (MI) or ultrasound (US) before initiation of 3 hrs of enzymatic hydrolysis.The duration of pretreatment ranged from 1 to 8 minutes at a power level of 800W with the control (conventional hydrolysis,CH) not being subjected to any pretreatment and neutrase was employed as the enzyme of choice for hydrolysis.
