  Sanhua plums is an important tropic zone fruit plant of Guangdong province,which have epicuticular wax and dense pulp,causing difficulties for moisture loss and sucrose penetration.Carbonic maceration (CM) had been used for grape wine making,which could change the microstructure of plant material as well as produce new substances under intracellular anaerobic fermentation.Therefore,we assumed whether the CM could be adopted as a pretreatment technology for plant material drying.
