  Chinese high marble beef has shown a rich marbling pattern of fat distribution characteristics, which is a high-value item in Chinese diet and greatly prized by consumer.Beef grader measurement method is used to obtain the information section of the ribeye, which has the disadvantages of low efficiency and low consistency effected by personal experience.In order to resolve this problem, an automatic on-line grading system was designed for classification of high marble beef.The system consisted of the image capturing equipment with wireless transmission and PC classification software as well as digital image processing technology.The classification results would be resent to the equipment in about 10s, therefore, the system was able to assess beef grade on-line with high-speed to demand the requirement of industry production.
