  Power ultrasound is an emerging and promising technology that has been applied in a variety of fields.As a new type of nonthermal processing technology,it has the advantages of efficient,environmental friendly and energy saving.It has been reported that ultrasound would modify the proteins properties due to its effects of shearing,mass transfer and generation of reactive radicals.Enzymes are macromolecular biological catalysts,which accelerate or catalyze chemical reactions.Most enzymes are proteins,while a few are catalytic RNA molecules.
