  Taking the common food borne pathogenic bacteria Bacillus cereus as the research object and using the one-dimensional infrared spectroscopy (FTIR) combined with two order derivative spectrum technology of non destructive analysis of Bacillus cereus growth change rule,It is found that based on the two order derivative spectra characteristic absorption peak, capsule、spore and other structures of Bacillus cereus can be identified.By observating the symmetric &anti symmetric carboxyl group stretching vibration absorption peak which appear near 1604.48cm-1 and 1396.21cm-l,it was gradually weakened from lag phase to the stable phase.Protein amide absorption peak near 1654.63cm-1 tends to be stable in the three stage.Thus, The structural changes of cell capsule can be acknowledged.The presence of Bacillus is determined according to the DPA absorption peak near 1617.98cm-1, 1384.64cm-1, 1560.13cm-l.Its changing in three stages from lag phase to stable phase.Experiments show that using FTIR can distinguish cellsmaterial structure, which lays a theoretical foundation for the related equipment of Bacillus cereus fast detection.
