The effects of different polyhydroxy compounds such as glucose,fructose,galactose,maltose,xylose,trehalose,dextran,glycerol,sorbitol,mannitol,xylitol,polyethylene glycol,different salts such as BaCl2,CaCl2,MgCl2,ZnCl,NH4Cl,LiCl,NaCl and KCl and surfactant Monoxal OT on the catalytic activity and stability of alkaline protease were studied.The enzyme was produced by a mutant strain of Bacillus subtilisEMS-8 in submerged fermentation.Polyethylene glycol and glycerol were found to be the most effective in retaining the catalytic activity of the enzyme for longer periods and at higher temperatures.Among different sugars,trehalose was proven to be the best for enhancing the storage of alkaline protease at room temperature.Among different salts CaCl2 and ZnCl were found to be the best for enhancing the catalytic activity and stability of the enzyme.
