White jelly mushroom (Tremella fuciformis) has been used in traditional China medicine.The following antioxidant activities of subfractious from the methanol extract of T.fuciformis were assessed: ABTS+-radical-cation scavenging activity, 1,1-diphenyl-2-picrylhydrazyl (DPPH)-radical scavenging activity, superoxide-dismutase-like activity, and inhibition of human low density lipoprotein (LDL) oxidation.The antioxidant compounds were purified further from these subfractions, and they were identified by ESI-MS/MS analysis.Among tested subfractions of the methanol extracts, chloroform fraction exhibited the strongest antioxidant activity with the highest total phenolic contents (66.31 μg CAE/mg extract) and flavonoids contents (5.12 μg QE/mg extract).ABTS radical scavenging activity of this subfraction was 7.89 μmol/L Trolox/mg of extracts which was the highest among subfractions.This fraction also showed the highest antioxidative activity in DPPH-radical scavenging activity and inhibition of LDL oxidation.Four phenolic compounds in the chloroform subfraction which showed the highest antioxidant activity were identified as vanillic acid, ferulic acid, 4-coumaric acid and 4-hydroxybenzoic acid by ESI LC-MS/MS analysis.
