The sweet potato residue dietary fiber being prepared with enzyme method was compared physical-chemical properties with the market dietary fiber,and further characterized by XRD,FT-IR,HPCE,SEM,BET and Particle Size in this paper.The results showed that the overall physical-chemical properties of the sweet potato residue dietary fiber was higher than the market dietary fiber,and the sweet potato residue dietary fiber had the characteristic functional group absorption peaks which composed of dietary fiber,such as OH,CH2,CH3,cumulative double bond and C=C,C=O,benzene ring C =C,epoxy C-O-C,β-glucoside configuration.
