Chitinases are glycoside hydrolases acting toward chitin, β-1,4-1inked polysaccharide of N-acetylglucosamine (GlcNAc), and classified into GH18 and GH19 families.The crystal structures of GH19 ehitinases from several plants and a few microbial species have been solved, and found to consist of two lobes, both of which are rich in α-helices.
