Color potato is violet,showing good appearance,and has a high water content and low calorie,and therefore it is highly usable as an uncooked food.However,it requires more diverse researches.Thus,in order to fred various uses of color potato (Potato Valley,Co.,Ltd.,Bora Valley),the present study measured the general elements of the potato (water,crude ash,crude fat,crude protein),the swelling power of starch made out of color potato,water holding capacity,DSC,SEM,X-ray,and amylase and amylopectin contents,and also measured chromaticity using potato powder prepared through freeze drying.In all the experiments,white potato (Potato Valley Co.,Ltd..,Daeseo) was used as the control group.
