The global wine market amounts to USD 65 billion per year[l].A particular brands market share is driven by two important factors: flavor and fragrance, defined by the environmental conditions and location where the wine is grown, and method of processing to yield the final product.While the flavor of wine is due to the presence in various quantities of various groups of compounds including monoterpenes, norisoprenoids, methoxypyrazines, etc., the fragrance is attributed to the presence of over 800 volatile organic compounds (VOCs) present in the wine[2].Separation and quantification of these compounds have therefore been of interest to the viticulturists and analytical chemists, but is often a formidable task with traditional one-dimensional gas chromatographic techniques.
