In Brazil most of the red rice is cropped in the Northeastern Region.In spite of being a crop of great regional importance it is in the eve of extinction.Grains of red rice partially polished of Cultivars Vermelho Traditional,MNA PB 0405,MNA CE 0501,and MNA CH 0501 were evaluated in the Food Science Laboratory at Embrapa Rice and Beans for grain size and shape according to Mohsenin (1970) as well as for amylose content and gelatinization temperature following the methodology described by CIAT (1989).
